For the burger:

500g beef mince

1 tsp Dijon mustard

1 tsp Worcestershire sauce

2 cloves garlic, minced

1 tbsp ketchup

1 tsp thyme leaves, finely chopped

Sea salt and cracked black pepper

2 tbsp olive oil

Pickled red onion;

1 red onion, very thinly sliced

Juice of 2 lemons

For the spicy mayonnaise:

75g mayonnaise

1-2 tbsp hot sauce

To serve:

4 seeded buns

8 slices pancetta

75g gruyere cheese, sliced

50g rocket

ketchup, optional

For the burger:

1.2 lbs beef mince

1 tsp Dijon mustard

1 tsp Worcestershire sauce

1 tbsp ketchup

1 tsp thyme leaves, finely chopped

Sea salt and cracked black pepper

2 tbsp olive oil

Pickled red onion:

1 red onion, very thinly sliced

Juice of 2 lemons

For the spicy mayonnaise:

1/3 cup mayonnaise

1-2 tbsp hot sauce

To serve:

4 seeded buns

8 slices pancetta

2.6 oz gruyere cheese, sliced

1/2 cup rocket

Ketchup, optional

Ziplock bag

Serves 4

Cheese, crispy bacon, pickled onion, spicy mayo… a good burger with all the trimmings really is hard to beat and this one has it all! I’ve added the holy trinity of sauces – ketchup, mustard and Worcester – to the beef patty for added depth of flavour.

Put the red onion and lemon juice into a small zip lock bag ensuring all the onions are immersed in the liquid. Leave aside to pickle for at least 1 hour.
For the burger, combine the minced beef, Dijon, Worcestershire sauce, garlic, ketchup, thyme, salt and pepper in a large bowl and mix until everything is evenly combined. Divide into 4 and shape into patties. Place a large pan on a medium high heat and add the 1 tbsp of oil.
Fry the streaky bacon for 2-3 minutes on either side or until nice and crisp, set aside. Reduce the heat to medium and place the burger patties in the pan, fry for 6 minutes on either side or until cooked through and browned. Once cooked, top with the cheese and cover with a cloche or lid for 3-4 minutes until the cheese is oozing and melted.
Place the bottom of the toasted bun onto a plate, smear with the spicy mayo, top with the burger, crisp streaky bacon, pickled red onion and rocket followed by the burger bun top.
