These pies, also called ‘Dingle pies’ and somewhat like the Cornish pasty, are traditional in Co. Kerry. They could be bought in Dingle every august at the Puck Fair in Killorglin. The ‘king’ of the fair is a large puck goat, much decorated and garlanded by greenery, which is hoisted high above the crowds onto a covered platform where he remains chained by the horns throughout the fair, munching on cabbages. Recipe from The Pleasures of the Table: Rediscovering Theodora Fitzgibbon.
