Makes 12 cupcakes

For the cupcakes:

200g self raising flour

140g caster sugar

1tbsp instant espresso powder, plus extra for dusting

1tsp baking powder

140g butter, in cubes, softened

2 large eggs

50ml milk

2 tbsp Irish whiskey

1 tsp vanilla extract

For the butter cream frosting:

170g butter, softened

225g icing sugar

1 tbsp Irish whiskey

1 tsp espresso powder

To decorate: 

Mocha chocolate coffee beans (in shape of coffee bean)

Makes 12 cupcakes

For the cupcakes:

1 1/2 cups self raising flour

3/4 cup caster sugar

1tbsp instant espresso powder, plus extra for dusting

1tsp baking powder

1 1/4 sticks butter, in cubes, softened

2 large free-range eggs

1/4 cup milk

2 tbsp Irish whiskey

1 tsp vanilla extract

For the butter cream frosting:

1 1/2 sticks butter, softened

1 1/2 cups icing sugar

1 tbsp Irish whiskey

1 tsp espresso powder

To decorate: 

Mocha chocolate coffee beans (in shape of coffee bean)

Cupcake tray

Paper cases

Large bowl

Electric hand mixer (optional)

These little cupcakes might look innocent but they are laced with good Irish whiskey! A perfect St. Patrick’s day sweet treat for grown ups!

 

 

Preheat the oven to 180˚C/350°F/Gas Mark 4 and line a cupcake tray with paper cases.
In a large bowl combine all the dry ingredients. Make a well in the centre of the bowl and break in the 2 eggs and add the butter, milk, whiskey and vanilla extract. Using an electric hand mixer beat all the ingredients together until just combined.
Divide the batter evenly into the paper cases and place in an oven for 15-20 minutes or until firm and light brown on top. Allow to cool on a wire rack before applying the frosting.
In a bowl beat the butter, sugar, whiskey, and espresso powder until smooth. Using a mini off set spatula spread the frosting over the cupcakes. Decorate each cupcake with coffee beans and a dusting of espresso powder.
