This week’s meal plan features lots and lots of Asian flavours – my go-to cuisine for fresh, light and colourful dinner inspiration – so be sure to stock up on soy sauce, rice wine, noodles and plenty of coriander! To break things up, I’ve also included my friend, Gaby’s Chicken Parmesan Pappardelle because I reckon we all need a bit of midweek comfort food every once in a while! MONDAY: One Pan Singapore Noodles

After a recent stay in a house with a limited kitchen, my love for one-pan dishes has grown astronomically. This dish is a super quick one too – vermicelli rice noodles come alive with only a brief lick of boiling stock so there’s no faffing about. Add to this a heap of tender, stir-fried vegetables and your week is off to a really healthy and wholesome start.

MONDAY: One Pan Singapore Noodles

After a recent stay in a house with a limited kitchen, my love for one-pan dishes has grown astronomically. TUESDAY: Crispy Fried Beef Salad

Recreating this Chinese classic at home is easier than you may think – the satisfying crispness is achieved simply by coating the beef in cornflour and giving it a quick shallow fry. To counteract the sweet stickiness of the steak, I’ve paired this with a refreshing, raw salad for a bit of balance, but a bit of fried rice wouldn’t go amiss!  The sauce recipe works really well as a glaze for chicken or salmon too..

I would make it at least three times a week and serve it to everyone—my college roommates, my tennis teammates, my then boyfriend, and so on. It’s such a comforting dish, and one I’m really fond of, so I wanted to figure out how to make it a little more polished for serving at a party. I took all the signature parts—marinara sauce, mozzarella cheese, Italian seasoning—and tossed it with pappardelle along with ground chicken!

I can regularly be found loading up my trolly at as Asian supermarket where you can buy jumbo sized bottles of essentials like fish sauce and soy sauce, as well as all the noodles you could possible want, for a fraction of the usual price.

I’ve taken inspiration from Japan with this salad of salmon sashimi, creamy avocado, rocket, coriander and toasted sesame seeds . The country is known for its fresh, skilfully prepared, healthy food – three things we could all do with more of! The whole dish is brought together with a pale green dressing humming with heat from wasabi paste (also know as Japanese horseradish) which is often used as a garnish for sushi.
