This week’s meal plan is all about light and fresh summer flavours. As ever, the recipes are quick and easy (and won’t have you slaving away over the stove) which means more time to savour the early summer evenings with family and friends! MONDAY: Griddled Courgette Salad with Chilli Mint Salsa

This zesty summer salad is guaranteed to get your midweek eating off to a good start. The bulghur wheat adds texture and substance, there’s tangy, creamy feta and the refreshing mint salsa gives it all a bit of zip. Be sure to make the salsa just before you’re ready to serve as the leaves have a tendency to turn black.

MONDAY: Griddled Courgette Salad with Chilli Mint Salsa

TUESDAY: Tomato & Ricotta Puff Pastry Tarts

Take one sheet of store-bought puff pastry and pile it high with lots of delicious summer ingredients and, hey presto, you get these beautiful tomato tarts! This is a perfect example of a cheat ingredient meal –  ordinarily puff pastry is complicated and time consuming to make from scratch. But buy the pastry in a shop and you get all the best bits of a homemade tart but in a fraction of the time. You can come back t0 this recipe whatever the weather, changing up the topping depending on what’s in season.

This pasta dish is one I come back to time and time again. I’ve been making versions of it since I first left home for one very important reason – its simplicity. All you have to do is roast Mediterranean vegetables until caramelised, add warm pasta to the roasting tin, toss the ingredients together thoroughly to get everything acquainted and serve straight at the table! Pass this one on to nervous cooks snd they’ll be forever grateful.

It’s not often I get to write about bricks in a recipe so I will enjoy it while I can! This slightly unusual cooking technique really works – the bricks ensure the whole chicken comes into full contact with the heat, resulting in super crispy skin all over and a tender, juicy interior. It goes beautifully with the sweet and spicy corn salsa as an accompaniment. Keep the recipe up your sleeve to use with any of the meat you grill over the summer.
