Another week, another inspiring meal plan to help you with your midweek suppers. This time we’ve got a bright green omelette, a gorgeous purple beetroot burger and a brinner dish (that’s breakfast for dinner to you and me). For those of you craving a bit of meat after last week’s veg-centric plan, never fear – there’s chicken salad (with a surprising ingredient) and Japanese favorite, Katsu curry. MONDAY: Green Omelette

My inner Dr Seuss fan gets excited at the mere thought of green eggs –even without the ham! I often make neon green spinach crêpes filled with Gruyère cheese and ham as a means to satisfy my needs but I do have a slightly lighter alternative in this super green omelette, which can easily become the vehicle for plenty of other ingredients of your choosing.

Beetroot are easy enough to grow, and there is a huge selection of varieties to choose from – pale pinks, candy-striped and even golden yellow. Whether, you’re growing your own or not, these vegetarian burgers are a great way of showing them off.

WEDNESDAY: Tequila Chicken Salad

I’m a bit of a lightweight when it comes to booze as my friends like to remind me on a constant basis. I’d sooner use tequila in cooking than down a shot of the stuff as in this recipe, where the tequila lends a peppery sharpness to the lime and mint-infused chicken marinade, which will give you extra tender meat. Paired with a sweet and savoury mango quinoa salad, it may almost make you forget your late night misadventures… well, almost.

Whether for brunch, lunch or dinner, these baked eggs are a speedy way to provide booming flavour and a dose of healthy comfort food. A basic tomato sauce is the hallmark of any good home cook and here it is put to good use to coddle eggs until their yolks are runny and dreamy. With an injection of dark heat from the harissa paste, for me this is all too often the answer to the question: ‘What’s for dinner?’

Take, for example, the 3-in-1 – an infamous concoction of curry sauce, chips and fried rice – a favourite of late-night Dublin. While I’m not comparing this katsu curry to the 3-in-1, it does have similar qualities: spicy curry sauce and crispy chicken all served with sticky rice. Let’s just say it hits the spot, late night or not.
