Welcome to my new blog series all about Meals In Minutes!

I get great satisfaction from using shop-bought cheat ingredients, especially since little Noah arrived! I’m talking ingredients like ready-made ravioli, puff pastry, pre-cooked duck breasts, hummus, tabbouleh, pizza bases, posh sausages and couscous. Yes, cooking from scratch means you always know what’s going into your food but there is nothing wrong with seeking out a few good-quality standby ingredients to save you time and effort in the kitchen!

1. Lemon & Garlic Chicken with Red Pepper Hummus & Herbed Cous Cous

This  is  the  recipe  that  gave  me  the  idea  for  Meals  in  Minutes  – it’s  the  perfect  example  of  a  dinner  for  which  the  ingredients  can  be  bunged  into  a  shopping  basket  on  the  way  home  from  work.  Its  key  cheat  ingredients  are  garlic  butter,  shop-bought  hummus  and  a  couscous  salad.  You  can  get  some  fantastic  prepared  couscous  salads;  try  one  with  feta  and  lemon  or  Moroccan  with  sultanas  or  chargrilled  veg  –  you  could  even  try  a  cauliflower  couscous  in  this  recipe and up your veg quota.

One top tip you should take away form this dish is that, just because you’ve bought a shortcut ingredient, it doesn’t mean you can’t improve it in a fraction of the time it would take to make it from scratch. Hummus is a prime example – some shop-bought varieties can be pretty flat, but add a squeeze of lemon, a grating of garlic, a sprinkle of sea salt and you’ll charm the flavour out it.

1. Lemon & Garlic Chicken with Red Pepper Hummus & Herbed Cous Cous

2. Creamy Tomato & Chorizo Ravioli Soup

This  rich  pasta  soup  is  like  a  hug  in  a  bowl  –  serious  comfort  food  made  in  minutes.  It  relies  heavily  on  the  spice  and  flavour  imparted  from  good-quality  chorizo  and  shop-bought  fresh  filled  pasta.  Use  pasta  with  any  filling  you  like,  but  ravioli  or  tortellini  with  ricotta  or  other  cheese  is  especially  good  here. Finally, there’s the passata – the versatile store cupboard staple no one should be without. You can add it to stock to make a soup (as in this recipe) or use it as a base for curries, casseroles and pasta dishes. The key is to cook out the rawness and then make it your own with spices, herbs, onions or pastes.

3. Beef Pho

While the process of boiling bones for six hours can be an incredibly satisfying one, it does mean a traditional homemade pho is out of bounds to most during the week. Cue a pouch of fresh stock from the grocery store (a powdered cube has its uses but this is not one of them – get the best stock you can lay your hands on). By infusing the broth with toasted coriander seeds, star anise, ginger, cloves and a charred onion you can add authentic flavour in a matter of minutes. In fact, the chicken laksa recipe in my new book uses a similar technique. You can reduce the cooking time further still, by dropping a packet of ready-cooked rice noodles in your basket too.

With all that time you save by not making your own dough, you can take a little extra consideration with what you put on top. Inspired by my travels, I like scouring the world food aisle for less conventional time-saving toppings and I recommend you do the same. Fiery, Korean ingredients like kimchi and gochujang add some serious depth and funkiness and go brilliantly with beef here. Plus, all that time invested in fermenting the kimchi has been kindly left to someone else!
