Is it just me or is the summer whizzing by? How are we in July already? I plan to really embrace the rest of the summer, whatever the weather, and there’s one sure way to do that… summer desserts!

From cakes, tarts, ice-cream Sundays or tray-bakes, the possibilities when it comes to summer desserts are endless. I really like to utilise all the fresh summer fruit that’s around at this time of year and farmer’s markets are great for local, seasonal produce.

A summer pavlova piled high with strawberries is my idea of the perfect summer treat but why not try my take on Eton Mess or my Stuffed Baked Plums? Whatever you choose, you won’t be disappointed! Here’s to the rest of summer!

1. Summer Pavlova

This mix makes a chewy, marshmallow meringue, which goes perfectly with the cream and fresh summer berries. Layering the meringue discs gives this beautiful summer dish fantastic texture! Serve this up at the end of a summer feast and it’ll be clean plates all around!

3. Baked Plums with Honey & Mascarpone

Baked stone fruit is one of my favourite summer treats.  They can be baked simply with a sprinkle of sugar until tender and served with vanilla ice cream or as I’ve served them here with a dollop of mascarpone.  Plums, peaches and nectarines all work well using this method.
