Dutch Baby Pancake-1 copy

1. Dutch Baby Pancakes

Traditionally a German recipe which is served with butter, lemon and icing sugar, these Dutch baby pancakes are a true treat and perfect for filling with a whole host of different ingredients! Top with fresh berries, chopped hazelnuts and a generous drizzle of melted chocolate or hazelnut spread and you’ll never go back to traditional pancakes again!

3. Gluten Free Pancakes with Blueberries & Banana

I’ve been making variations of these pancakes for years and the basic batter can be adapted with addition of all sorts of ingredients such as nuts, seeds, chocolate and berries. Store-bought oat flour can be used here, but I normally blitz up oats in a food processor until they are fine consistency. Recipe here. {Taken from my cookbook FRESH.}

5. Dairy-Free Semolina Pancakes with Slow Roasted Rhubarb

These semolina pancakes are brilliant for anyone with a dairy intolerance as they don’t contain milk and can even be vegan friendly if you avoid the yoghurt and honey. Inspired by one of my favourite Dublin brunch spots,Brother Hubbard, these pancakes are a lovely alternative to traditional crepes. Recipe here.

7. Ricotta & Lemon Curd Pancakes

An excellent moist pancake batter with attitude which can be paired with topping of your choice. You won’t go far wrong with a dollop of yoghurt, lemon curd and some fresh summer berries. These make a nice change from traditional pancakes.

8. Lemon & Poppy Seed Pancakes

Pancakes and waffles are my last minute emergency breakfast (or dessert) and the basic batter is incredibly adaptable. I like to add lemon zest and poppy seeds for flavour and texture, serve with fresh strawberries, a vanilla mascarpone and drizzle with syrup and you have a dessert it’s hard to say no too.
