Roast Lamb-1 copy

1. Traditional Roast Leg of Lamb

I love using the classic combo of garlic & rosemary to flavour lamb. An easy side dish to serve alongside the roast lamb is simply braised baby gem, with peas in white wine and thyme. In springtime, wild garlic appears all across Ireland in shaded woodland areas. It is easy to recognise from its distinctive garlic smell. The leaves can be harvested and treated like any salad leaf or used to make a pesto to serve alongside the lamb.

2. Lamb Shanks with Nettle Mash

This dish looks very impressive served to a table. The nettles add a great twist to the mash and the lamb works really well together with the persillade.

3. Beef Pot Roast

Pot roasting is a very useful method for dealing with the less tender cuts of meat, such as small lean joints of topside or silverside and blade or chuck steak (look for some marbling of fat throughout and often labeled in supermarkets as housekeeper’s cuts) but rolled brisket is often considered best as it has a perfect fat to meat ratio.

4. Honey Glazed Carrots

These sticky and sweet little carrots are so simple and delicious and they are ready in a snap! The honey brings out their natural sweetness while the addition of butter and thyme to the glaze really round off the savoury side. Simple and delicious.

5. Irish Creamed Kale

Wary of kale? This will change your mind. Think creamy, buttery goodness mixed with delicious soft greens. Like spinach, kale is packed with nutrients, but doesn’t wilt down quite as much as spinach when cooked so it is a great alternative.

Hot Cross Bun Pudding-1 copy

7. Hot Cross Bun Pudding

With an abundance of hot cross buns at Easter time, this is the perfect way to use up any leftovers. If you prefer you can add additional raisins instead of the chocolate chips but I really like the chocolate hits you get when you add them in…it is Easter after all! You can also make this pudding with leftover brioche or whatever bread you have hanging around but it is particularly delicious when you use these spiced buns.

9. Lemon & Poppyseed Loaf

What is it about lemon cakes and treats that makes them so popular? What I love most about this particular Lemon & Poppy Seed Loaf is just how simple it is to prepare. I like to make a loaf, store it in a cake tin and have it at the ready for any guests who might drop in for a cup of tea over Easter!
