At this time of year, I get more requests for kid friendly recipes (which might have something to do with kids being on summer holidays) so I am here to help! One thing I always say to parents is to give your children more credit when it comes to their taste buds. Yes kids love chicken nuggets and chips but if you give them the chance, I bet the’d love some of these dishes too!

Who didn’t love fish fingers as a kid? In fact they are still one of my guilty pleasures! I coat my fish cakes in a little polenta, which, when fried gives a wonderful golden, crunchy crumb. Best eaten fresh but freeze beautifully.

Bangers and Mash is such a classic comfort dish and this recipe is no exception. It has the extra flavour punch with the addition of roasted garlic to the mashed potatoes. This a quick and simple mid-week super that doesn’t compromise on flavour.

6. Shepherd’s Pie

This was a staple in our house (and most Irish homes!) when I was growing up. You can mix it up by adding lentils to the base or use sweet potato rather than traditional mash. Whatever you do, I guarantee the plates will be licked clean and they’ll be asking for seconds!

There’s a lot to be said for a simple tray bake and this is one of my favourites. My Lemon & Blueberry tray bake is light and zingy and the creamy mascarpone frosting, literally is the icing on the cake! Super easy to make and there is never a crumb left which is always a good sign!
