1. Traditional Roast Leg of Lamb

I love using the classic combo of garlic & rosemary to flavour lamb. An easy side dish to serve alongside the roast lamb is simply braised baby gem, with peas in white wine and thyme. In springtime, wild garlic appears all across Ireland in shaded woodland areas. It is easy to recognise from its distinctive garlic smell. The leaves can be harvested and treated like any salad leaf or used to make a pesto to serve alongside the lamb.

Pot roasting is a very useful method for dealing with the less tender cuts of meat, such as small lean joints of topside or silverside and blade or chuck steak (look for some marbling of fat throughout and often labeled in supermarkets as housekeeper’s cuts) but rolled brisket is often considered best as it has a perfect fat to meat ratio.

A quick cook, cheat’s version of the classic slow cooked porchetta. This quick recipe borrows the recipe for porchetta’s aromatic stuffing and is rubbed into a butterflied pork loin wrapped up in salty prosciutto. Serve it with thinly sliced roast potatoes liberally sprinkled with Parmesan cheese, and a fresh watercress salad- dinner is served!

These sticky and sweet little carrots are so simple and delicious and they are ready in a snap! The honey brings out their natural sweetness while the addition of butter and thyme to the glaze really round off the savoury side. Simple and delicious.

Wary of kale? This will change your mind. Think creamy, buttery goodness mixed with delicious soft greens. Like spinach, kale is packed with nutrients, but doesn’t wilt down quite as much as spinach when cooked so it is a great alternative.
