Tieghan Gerard is food photographer, stylist and recipe developer who has been cooking since the tender age of 13. Her blog, Half Baked Harvest is a must read for anyone who likes to cook (or eat!). Her first cookbook comes out fall 2017 and I can’t wait to get a copy. Her slow cooker recipes caught my eye so she has shared her tips for creating fuss free crock pot dishes below. Thanks Tieghan!

1. Cooking With Meat

Most meats hold up really well to this low and slow style of cooking. When choosing meat for the slow cooker, choose tougher, fattier cuts like chuck roast, short ribs, and pork shoulder/butts. The slow cooking time creates tender and moist meat that should fall apart at the end of the stewing period. Top Tip: For added flavor, brown your meat before adding it to the slow cooker.

2. Veggies, Beans & Legumes

When slow cooking with veggies it’s important to start the cooking process with heartier veggies such as bell peppers, carrots, potatoes and other root vegetables. The heartier veggies can slow cook without becoming mushy. It’s best to add more tender veg like leafy greens in the final 30-60 mins of cooking. Legumes like lentils and pulses are a great vegetarian protein source to slow cook with and add great flavour as well as bulk.

3. Planning Ahead

Mornings can be busy, so it’s best to prep your ingredients the night before. Trim meat, cut veggies, measure out dry ingredients, etc. Keep any ingredients that need refrigeration in the fridge until morning. Then simply add them directly to the slow cooker before you head out to work. Top Tip: Don’t store slow cooker insert in the fridge, as a cold insert will take longer to heat up and will affect cooking time.

4. Keep That Lid On Tight

It is important that during cooking, you keep the lid on tight as much as possible. Every time you open the slow cooker you will need to add an additional 10-15 minutes of cooking time. If possible, I recommend only checking and stirring the food once throughout cooking, unless otherwise directed by the recipe.

5. Finish With Fresh Herbs Or Greens

Slow cooked meals can sometimes lack in freshness and color, so I always like to complete my recipes with fresh herbs and greens. Right before serving, stir in herbs like basil, cilantro, and parsley. I also love finishing off slow cooked meals with a garnish of tender greens, such as spinach, arugula, microgreens or baby kale. Finish the dish off with a squeeze of fresh lemon or lime depending on the recipes flavors.
