It’s no surprise some of my favourite recipes are inspired by my trips to Asia. With a massive amount inspiring ingredients there is so much to get excited about.

Vietnam and Thailand offer some of the best food I have ever tried and that brilliant combination of salty, sour, sweet and spicy flavours have had me addicted ever since.
The recipes in this weeks newsletter are just some of my favourites from my travels and will hopefully get you cooking something tasty this weekend!

1. Simple Pad Thai

Rice noodles are a fantastic storecupboard ingredient and I regularly stock up at Asian markets where you can also buy jumbo sized bottles of Asian staples like fish sauce, soy sauce, and so much more. This dish is possibly one of the most famous Thai dishes and appears on menus throughout the world. Rightfully so, its a speedy dish full of deep layers of sweet and aromatic flavours.

1. Simple Pad Thai

Rice noodles are a fantastic storecupboard ingredient and I regularly stock up at Asian markets where you can also buy jumbo sized bottles of Asian staples like fish sauce, soy sauce, and so much more. 2. Thai Fish Cakes

These might sound complicated but if you have all the ingredients, all it takes is to blitz everything until smooth, stir through a little spring onion and green beans, fry them and serve for the most delicious little Asian taster! Serve with sweet chilli sauce for a great little lunch or with a side salad for a light main course.

2. Thai Fish Cakes

These might sound complicated but if you have all the ingredients, all it takes is to blitz everything until smooth, stir through a little spring onion and green beans, fry them and serve for the most delicious little Asian taster! Serve with sweet chilli sauce for a great little lunch or with a side salad for a light main course.

3. Chicken Satay Skewers

These chicken skewers are great as an appetiser to any meal or even just for portable party snacking! Served along side a fresh leafy green salad, they make for a perfect healthy and tasty lunch! Served with fragrant peanut satay sauce for dipping!

4. Chilli & Lemongrass Chicken

This is a wonderfully fragrant dish that is very easy to prepare. I use chicken thighs here as they have more flavour, but you can easily use chicken breasts instead. The paste made for the sauce can also be used with beef or pork.

5. Thai Chicken Stew

This is very similar to a Thai green curry but it’s a lot lighter in terms of spices, sticking mainly with the fresh ingredients like ginger and lemongrass. It looks and tastes great and the best bit is, it couldn’t be easier to make!

The real KFC chicken means business! Crispy chicken in a sweet and spicy sauce makes for some serious snacking! Not the kind of KFC you’re used to but grab a bucket!
