One of my favourite parts of the weekend are those long and lazy brunches. Whether you’re a ‘full Irish’ or a stack of pancakes kind of bruncher, I’ve an option to suit all needs.

From sweet treats like pancakes, french toast and pastries to excellent eggs and savoury options, you can’t go wrong with a weekend brunch. Plan ahead, have your ingredients ready to go and you’ll give your local cafe a run for their money (and save yours). I’ve gathered up a collection of recipes from my archives all well worth getting out of bed for this weekend!

Traditionally a German recipe which is served with butter, lemon and icing sugar, these Dutch baby pancakes are a true treat and perfect for filling with a whole host of different ingredients! They make a nice change from traditional pancakes at the weekend.

Eggs Benedict has to be one of my ultimate treat breakfasts. Runny poached eggs with salty crisp bacon on top of a soft toasted English muffin, all coated in a tangy rich Hollandaise sauce – true perfection!

Also known as baked eggs, this is perfect at the weekend if you want something quick. This is a wonderfully simple little French dish which makes a perfect weekend brunch. Soldiers essential!

4. Raspberry Scones

What I love most about scones is that you can whip up a batch in a matter of minutes, usually with ingredients you already have in the house. I like to add fresh raspberries but you can keep the dough plain or add any berries you like. A thick layer of butter and jam is essential though!

My everyday breakfast tends to be scrambled eggs, so at the weekend I like to try something a little different. Although not exactly groundbreaking, the simple addition of rocket and goat’s cheese makes these eggs served on a croissant a fantastic lazy breakfast treat.

6. Gluten/Dairy Free Semolina Pancakes

These semolina pancakes are brilliant for anyone with a dairy intolerance as they don’t contain milk and can even be vegan friendly if you avoid the yoghurt and honey. Inspired by one of my favourite Dublin brunch spots, Brother Hubbard, these pancakes are light and quite alternative when served with poached rhubarb, yoghurt and mint. A weekend treat without the guilt!
