The true beauty of cooking is finding those recipes which only take minutes to prepare and the rest of the hard work is done in the oven. This episode is all about oven meals and recipes which take minimal prep while producing maximum results.  A pasta sauce cooked until tender and caramelised in the oven, a one tray chicken dinner with baked feta, and a rice bake prove that little effort can create incredible dishes.

1. One Tray Roast Vegetable Pasta

This pasta dish is one I come back to time and time again. I’ve been making versions of it since I first left home and the one main reason is because of its simplicity. You simply roast Mediterranean vegetables until caramelised, add warm pasta to the roasting tin, toss to get everything acquainted and serve straight to the table!

1. One Tray Roast Vegetable Pasta

This pasta dish is one I come back to time and time again. I’ve been making versions of it since I first left home and the one main reason is because of its simplicity. You simply roast Mediterranean vegetables until caramelised, add warm pasta to the roasting tin, toss to get everything acquainted and serve straight to the table!

2. Turmeric & Ginger Chicken

The spice rub used for this recipe is one that I have used frequently, particularly if I can get my hands on fresh turmeric. Of course you can use dried but there is a pungency to the fresh root that does out do the powder. The mix can be used to marinade chicken or fish and especially delicious if either are cooked over hot coals.

4. Ras El Hanout Chicken with Baked Feta

In this recipe I have used a dry rub option on crisp chicken thighs, cooked in the oven until tender and humming with spice. Alongside them- baked feta. The idea of baking feta cheese makes it, as an ingredient, far more appealing to me. Perhaps it has been ruined for me by one too many dodgy Greek salads, but this method reduces it’s acidic bite and leaves you with a warm and creamy cheese which impressively holds it’s shape. Alongside the transformed chicken and the crunch of some lightly dressed fennel shavings and herbs, this is a supper, which is far greater than the sum of its parts.

If ever there was a summer salad to impress, this would be it. Humble though its ingredients are, they are used in such a way as to make the very most of them. Like many bread salads, this one nds its origins in peasant food but makes a hearty dish humming with spice and avour. Sprinkle with a little extra sumac before serving for a sharp hit of citrus. You could also replace the sourdough with toasted pitta.
