We all know breakfast is the most important meal of the day but it’s often the most neglected or even ignored! If you’re able to eat a bowl of porridge every morning, I tip my hat to you but I just can’t do it. I want variety, colour, flavour and excitement so I have gathered up some of my favourite breakfast recipes. I hope you like them!

1. Super Green Omelette

My inner Dr Seuss fan gets excited at the mere thought of green eggs –even without the ham! This is a great breakfast as you can add whatever veg you have in the fridge.

2. Frozen Smoothie Bowl

Smoothie bowls are California’s latest “in thing” and I’ve spotted these frozen smoothie bowls more than once.  Having ice cream scoops of smoothie does feel a little like having dessert for breakfast but with home made granola, it’s a novelty worth trying.

3. Baked Oatmeal

Consistently one of my most popular recipes and I’m not surprised. Easy to make, packed with healthy ingredients and a batch will last you through the week. Serve with yogurt, fresh berries and a drizzle of honey or grab one as you run out the door.

4. Mexican Breakfast Egg Tacos

Corn tortillas are a must in LA and I would recommend you visit Picado in Dublin where they stock them or order online at mymexicanshop.ie. Any excess salsa will keep well stored in a jar in the fridge for at least 5 days.

5. Blueberry & Banana Pancakes

I’ve been making variations of these pancakes for years and the basic batter can be adapted with addition of all sorts of ingredients such as nuts, seeds, chocolate and berries. Store-bought oat flour can be used here, but I normally blitz up oats in a food processor until they are fine consistency.
