Thai Beef Salad

January often conjures up ideas of miserable salads and self deprivation but I want to fight this! Healthy eating can mean delicious, filling and satisfying meals spanning from breakfast right up to dinner.

1. Homemade granola with Honey & Yoghurt

Perfect breakfast which can be adapted depending on what fruits are in season. One of my favourite ways to serve homemade granola is with some fresh strawberries,  some natural yoghurt and a nice drizzle of honey. Add whatever nuts,  seeds, or dried fruit you like…Recipe here.

This smoothie has the ideal combination of sharp and sweet and provides the ice-cold hit that could wake anybody up. Don’t be tempted to add sugar or any extra sweetness, as the banana and apple juice will balance out any sharpness from the berries. Recipe here.

On my first visit to Bangkok, it was a hot and sticky night when we arrived and this Griddled Beef & Mint Salad with Toasted Rice & Peanuts was the dish we tucked into after wandering the streets. The rather interesting addition, to what would otherwise be an ordinary beef dish, is the toasted ground rice, which adds both texture and a surprisingly smoky, nutty flavour. Recipe here.

For a simple summer supper I like to roast or BBQ chicken drumsticks and thighs and roll the hot meat in the dry rub and serve it alongside a simple shaved fennel salad with toasted pine nuts.  It results in really electric bursts of flavor and textures. Recipe here.
