If you are anything like me, I am sure you are addicted to cookbooks. Here in Ireland the standard of Irish cookbooks has really risen in the last few years and there are plenty of food writers to be excited about. Last week I was filming at the ever lovely Catherine Fulvio's Ballyknocken house for Bord Bia and while I was there I couldn't help but drool over her latest cookbook The Weekend Chef.

Catherine has kindly shared some of her favourite brunch recipes from the book which you can see below.     My favourite brunch, Heuvos Rancheros. Warm tortillas, spicy tomato salsa, soft yolk eggs that ooze when you cut into them, a sprinkling of coriander and guacamole on the side. Perfect.

    For me perfect brunch are crispy chocolate wafels with homemade cherry jam I`ve made last summer sprinkled with icing sugar chopped dark chocolate served with a cup of orange tea. These and long lazy staying in bed with a good book make ideal Saturday morning for me :)

    I go through phases but at the moment we’re loving banana and oat pancakes on a Sunday. It’s literally just an egg, mashed banana, dash of milk and loads of oats. Really yummy and fills my 3 toddlers up with goodness. I happened to have a single portion box of alpen lying around this week so added that too and it was delicious. I thought the flakes would go soggy but they just added crunch. Loooove weekend breakfasts!

    We do not have one particular favorite, but favorite weekend brunch items are usually ones that we would not ordinarily make during the week, such as Eggs Benedict or French Toast
