Tomato, Basil and Mozzarella Salad

Serves 2-4
1 large mozzarella ball, sliced thinly
3 large tomatoes, sliced thinly
A good handful of fresh basil
1-2 tablespoons of good quality extra virgin olive oil
Sea Salt and freshly ground black pepper
Try to choose nice juicy tomatoes which have a really rich red colour and mozzarella which is delicate, soft and springy.
The Method
Assemble the tomato and mozzarella on a serving platter, drizzle with olive oil and season generously with sea salt and ground black pepper.
Tuck a generous amount of basil leaves in amongst the tomato and mozzarella. Serve when you are ready.
