Prawns can be a little daunting if you haven’t cooked them before but to be honest they literally take minutes under the grill and this really simple recipe transforms them into the perfect sweet and spicy party food! They can be tricky if you can’t get your hands on the prawns prepared, but don’t be put off if you can’t. Simply spend a few minutes removing the heads and peeling the outer shells, and they are ready to rock.
3 garlic cloves, finely minced
1 long red chilli, seeded and finely chopped
2 tablespoons of honey
2 tablespoons olive oil
2 teaspoons lime juice
Salt and freshly ground black pepper
24 raw prawns, peeled and deveined
Lime wedges, to serve
A handful of Coriander, freshly chopped
Thread 3 prawns onto each wooden skewer and place on a plate and set aside.
In a bowl whisk together the honey, olive oil, lime juice with the garlic and chilli.
Brush the mixture over the prawns, season with sea salt and ground black pepper and then place them under a hot grill for 2-3 minutes either side.
Serve straight away with lime wedges and some freshly chopped coriander
